FIRST COURSE – AMUSE BOUCHE

Garam Masala Scented Stuffed Patty Pan Squash with Mint Oil – a blend of potatoes, fresh peas and onion seasoned with a fragrant spice blend from Northern India, served in a delicate summer squash

SECOND COURSE – SOUP SIP & COMPOSED SALAD

Sweet Potato Vichyssoise – a play on the traditional chilled French potato and leek soup using sweet potatoes and lemon basil

Roasted Tomato Caprese Salad – a carefully arranged salad of maple roasted tomatoes, creamy burrata cheese, spicy arugula and a focaccia crostini

ENTREE COURSE

Certified Black Angus Tenderloin with Fire Roasted Peppers and Citrus Salsa Verde – grilled and roasted to a perfect medium rare and served with lightly charred peppers; finished with a sauce of blended fresh herbs, garlic and olive oil

OR

Eggplant Peppernata Roulade with Heirloom Potato Jam – grilled eggplant wrapped around scarred bell peppers, carrot, and onion, and finished with a vibrant reduction of heirloom tomatoes (vegetarian option)

Yukon Potato “Tostones” – twice fried crispy Yukon potatoes

Corn Ribs with Ricotta Insalata – roasted strips of sweet corn on a tiny ribbon of cob tossed with a blend of ground chiles, toasted cumin, a hint of lime, and crumbled ricotta cheese

DESSERT COURSE

Liberty Pole Tiramisu – lady fingers soaked in Liberty Pole’s Bourbon Cream, and layered between a rich Italian mascarpone then topped with espresso spiked Chantilly cream

Flat footwear is recommended, as this is a true farm experience. In the case of inclement weather, this rain or shine event will be held inside the greenhouse.
